Aaloo Ghobi Ingredients :
• 1 large cauliflower, finely cut
• 3 medium sized potatoes
• 3 medium sized onions, finely chopped
• 3 medium sized tomatoes, finely chopped
• 1 tbs garlic-ginger paste
• 1 tbs red chilli powder
• 1 tbs salt or as per taste
• 1 tbs turmeric powder
• 1 tsp cumin seeds
• handful of chopped coriander leaves
• 2 chopped green chillies
• 1/2 cup oil or as desired

How to Prepare :
Heat oil in a large pan. Add onions, cumin seeds and green chillies. Allow the onions to fry until they are brown. When they turn brown, add garlic-ginger paste and fry for few minutes. Now, add red chilli powder, salt and turmeric powder, add little water. Fry for a 3-4 seconds and then add tomatoes. After adding the tomatoes, take out the green chillies and keep them aside. Once you take out the green chillies, put enough water to cook tomatoes until they are tender. Once tomatoes are tender, add in the cauliflowers and potatoes. Stir the vegetables well. Add 2 cups of water to allow the vegetables to cook. Turn the heat to low and cover the pan with its lid. Cook for 15-20 minutes, stirring the vegetables well after each 5 minute to prevent them from sticking on the pan. If the cauliflower and potatoes are still raw, you can add more water and allow it to cook until they are well tender. Leave no water in the cooked vegetables. Garnish with coriander leaves and fried green chillies. Serve with naan or chappatis.
