Chicken with pineapple Ingredients:
1/2 cup pineapple juice
1/2 cup pineapple pieces
1/2 cup cornflour
1 cup chicken stock
1 tsp Chinese salt
2 tsp sugar
2 capsicums, sliced
2-3 tbsp oil
250gms chicken, cubed
Salt and pepper to taste
Method:
Marinate chicken with salt, pepper and Chinese salt. Heat oil in a pan, fry capsicums, remove and keep aside. In the same oil, fry chicken.
For sauce:
Mix cornflour with one cup of water, add pineapple juice and sugar and boil. While boiling, mix chicken. stock and continue to boil till it becomes thick. In a bowl transfer the chicken and capsicum slices, add the sauce and garnish with pineapple pieces.
